Rawon

Ingredients

4 1/2 cups of water for boiling
3 tablespoons of cooking oil
1/2 inch of galangal root
1 lemongrass, crushed
2 bay leaves
2 tablespoons of sweet soy sauce
sugar and salt to taste
3 pieces of keluwak
2 teaspoons of fried coriander
1/2 inch of turmeric root

Preparation

Grind the keluwak, shallot, garlic, coriander and turmeric root into a paste

Fry the condiments together with galangal, bay leaves, kaffir lime leaves, and lemongrass until fragrant

Add in the beef. Stir until the beef turns color. Add the sweet soy sauce, salt, sugar and water.

Simmer with low heat until the beef is tender.
