Rice Krispy Treats With Chocolate Sunbutter

Ingredients

1 package Dandies air-puffed marshmallows (classic vanilla flavor, contains 3 tablespoons Earth Balance Soy-Free Spread
Chocolate Sunbutter Topping
3 tablespoons Earth Balance Soy-Free Spread
3 tablespoons Sunbutter Natural Sunflower Seed Spread

Preparation

In a large pot, melt Earth Balance Soy-Free Spread over low heat. Once melted, add marshmallows. Stir constantly to make sure the marshmallows are not burned. Turn off the heat when the marshmallows are melted. Add the rice cereal to the melted marshmallows. Mix really well and transfer to a 8.5 x 13 inch baking dish. Press down the mixture really hard and let it cool.

Melt the remaining Earth Balance Soy-Free Spread in a small pot. At the same time, melt the chocolate in the microwave over medium to low heat. I normally heat for half a minute. If it is not melted, I add another half a minute. The key is not to overcook the chocolate. If you don't like the microwave method, you can use the double boiler method. That is, over low heat on a stove top, add chocolate to a small pot which is sitting on top of a bigger pot. The bottom pot is filled with water but the water should not touch the bottom of the small pot. Stir constantly until the chocolate is melted.

Stir in the sunflower seed spread and the melted butter. If it is a little dry for you, add a little melted Earth Balance Soy-Free Spread or water. Combine the mixture to reach a smooth consistency.

Using a cake spatula, spread the chocolate sunbutter evenly over the rice krispy treats. Set side and let it cool.

Cut into desired shapes and serve.
