Simply Spicy Cod Wraps

Ingredients

1 pound cod fillets
1 cup cabbage, shredded
1/2 cup celery, chopped into small pieces
1/4 cup red onion, finely chopped
2 tablespoons cilantro, finely chopped
3 tablespoons low fat mayonnaise
1 tablespoon chipotle peppers in adobo sauce, finely minced
2 teaspoons lime juice
1/2 teaspoon lime zest
1/2 teaspoon cumin

Preparation

Spray a large non-stick skillet with cooking spray and place over medium heat. Add cod and cook 5 – 7 minutes until cod is just cooked through and flakes at the thickest part.

In a large bowl combine the remaining ingredients.

When cod is cooked, break apart into large chunks and fold into salad.

Eat as is, or wrap the salad inside your favorite wrap.

About

This recipes is adapted from a shrimp recipe on allrecipes.com. I've used cod and cabbage instead of the shrimp and lettuce originally called for, and upped the nutrition by adding celery and placing it all in a low calorie wrap. Crunchy and delicious.
