Bihari Kabab

Ingredients

1 kg Thin beef slices 2 inch x 4 inch (Parchay or Pasanda meat)
3 tablespoons Oil
2 tablespoons Raw papaya crushed (Unripe papaya)
2 Onion chopped
2 teaspoons Ginger crushed
2 teaspoons Garlic crushed
1/2 cup Yoghurt beaten
Salt to taste
1 teaspoon Cumin powder
1 teaspoon Coriander powder
1 teaspoon Cubeb powder
1/2 teaspoon Black pepper powder
1/2 teaspoon Cardamom green powder

Preparation

Fry onion in oil till golden brown. cool and crush.

Now add crused onion, ginger, garlic, papaya, oil and spices to the beaten yoghurt and make a paste.

Coat this paste to meat strips and marinate for 2 hours.

Insert the marinated meat strips in skewers (seekhs) in sewing manner.

Apply thread to avoid fell during grilling.

Now grill over charcoal fire till tender.

Bihari Kabab is ready.Serve with raita and salad and Roti/Naan.
