Oatmeal Raspberry Bars

Ingredients
1 1/4 cups all purpose flour
1/2 teaspoon of baking Soda
1/4 teaspoon salt ( I used ½ tsp. )
1 egg
1 cup of light brown sugar
1 teaspoon of vanilla extract ( I used ½ tsp. of almond )
2 cups of old fashioned rolled oats divided
Preparation

Preheat the oven to 350F. Grease or spray a 9x9 inch square pan.

In a large bowl, Beat the butter and sugar together at medium speed until light and fluffy (2-3 minutes ).

Slowly add the flour mixture and mix till everything is combined.

The dough will be very thick.

Press about 2/3 of the dough into prepared pan.

Spread the jam over the base. Try not to get too close to the edges of the pan or else it will burn.
