Fresh Mango Avocado Salsa

Ingredients

1 large, ripe avocado, mashed
1 large, ripe mango, peeled& diced
1/4 cup red onion, finely chopped
3 tablespoons fresh cilantro leaves, torn into small pieces
1/2 teaspoon salt (more to taste)
1/2 teaspoon ground black pepper (more to taste)
1 14.5 oz can unseasoned diced tomatoes (use half the can)
1/4 teaspoon Chipotle Chile Pepper seasoning (more to taste)- You can

Preparation

Add the avocado to a large mixing bowl and mash with a fork.

Squeeze the juice from half a large lemon over the avocado.

Add the diced mango and onion to the bowl.

Add half the can of diced tomatoes including the juice. Add the salt, pepper and Chipotle Chile Pepper seasoning.

Add the torn cilantro leaves and mix all the ingredients together. Add more seasoning and lemon juice to your taste.

About

This is an easy salsa recipe that is different from your typical salsas. The sweetness of the mango and the smokiness of the chipotle seasoning is a great combination.

You can also tailor this salsa to your tastes. Instead of using canned tomatoes, use fresh. Rather than including Chipotle Chile Pepper seasoning, use a Jalapeno pepper (or any other type to your liking).
