Cilantro Lime Salad Dressing

Ingredients
1/2 cup of chopped cilantro
1/4 cup canola oil
2 tablespoons fresh lime juice
1 tablespoon apple cider vinegar
Salt and pepper to taste
Preparation

In a food processor or blender add cilantro, lime juice, vinegar, salt and pepper.

While blender is running, slowly add the canola oil till well blended.

Try this:

Mixed greens, grilled corn, black beans, chopped tomato, avocado, shredded monterey jack cheese and crunchy tortilla strips.

Toss salad together and add vinaigrette.

Optional: Grilled Shrimp or Chicken

Tip: I sprinkle chili powder on shrimp before grilling for extra flavor.
