Gigantes Plaki /baked Lima Beans

Ingredients

2 cups lima beans
1 onion, chopped
2 cloves garlic, sliced
4 tomatoes, skinned
2/3 cup olive oil
1 buch parsley, chopped

Preparation

Soak the beans overnight.

Rinse, put in pan and cover with water, bring to a boil and cook for 5 minutes.

Drain the beans, rinse, and return to pan.

Add fresh water, bring to boil, reduce heat and simmer until soft.

Preheat oven to 400 f /200 c.

Drain the beans and transfer to fireproof dish.

Add all ingredients, season with salt and pepper and combine well.

Bake beans for one hour.

Check for doneness (beans should be very soft).
