Quinoa Tabouli Recipe

Ingredients

Ingredients:
5 1/2 cups quinoa, cooked, still warm
1/2 cup lemon juice (start with ΒΌ cup and go from there; you may prefer it less lemony)
cup EVOO
3/4 teaspoon unrefined sea salt
3 plum tomatoes, seeded and cut into small dice
1/2 bunch parsley, chopped
4 scallions, thinly sliced
2 ribs celery, cut into small dice
1/2 bunch mint, chopped
1/2 bunch chives, chopped

In a large bowl, toss warm quinoa with lemon juice, oil, salt. Let sit until reaches room temperature.

Combine quinoa with tomatoes, scallions, and celery. Mix thoroughly.

Just before serving toss in the mint, parsley and chives. Season to taste.
