The Planters Peanut Gang Peanut Brittle

Ingredients

2 cups sugar
1/2 cup water
1/2 stick butter
1 1/2 teaspoons baking soda

Preparation

Butter two baking sheets and the side of a large cooking pot. Set baking sheets aside.

Combine sugar, corn syrup, water, and butter in cooking pot. Cook over medium high, stirring constantly with wooden spoon, until butter is melted and sugar is dissolved.

Attach candy thermometer to side of pan.

Lower heat to medium low and stir occasionally until temperature reaches 275.

Add peanuts, stirring until well combined.

Continue stirring occasionally until temperature reaches 295 degrees.

Remove from heat and quickly add baking soda, stirring briskly.

Pour mixure onto buttered baking sheets, dividing evenly.

Spread mixture as much as possible with wooden spoon.

As brittle begins to cool, stretch by pulling brittle using fork underneath and knife on top of brittle.

Once cooled enough to touch, break brittle into pieces, and transfer to serving dish.

About

This recipe is compliments to an old Better Homes and Gardens cookbook. Though the original recipe does not stipulate Spanish peanuts or Planters, I'll take that liberty here. Planters ensures the best nuts and Spanish peanuts add a nice flavor to the peanut brittle. You can also use dry roasted nuts for a different variety, but most people prefer Spanish peanuts.
