Green Pea and Mint Soup

Ingredients

4 tablespoons butter
3 cups stock
3 mint springs
3 cups milk
light cream to serve

Preparation

Heat the butter in a large heavy pan. Add the chopped green onions and cook on a low heat until they are softened.

Stir the peas into the pan, add the stock and mint, and bring to a boil. Lower the heat and simmer until the peas are tender.Season to taste.

Pour the soup into a food processor or blender, add the milk and puree until smooth.

Leave to cool and serve warm or chill lightly, as you wish. Garnish with a little light cream.
