Autumn Olive Jam

Ingredients

1 tablespoon lemon juice

Preparation

Rinse berries, and remove leaves and stems

Place berries in a large pot and add about half inch of water. Simmer for half an hour until the berries are soft and the pit can easily be removed.

Pass fruit through a food mill discarding the pits and setting the juice aside.

Pass the mashed fruit through a fine strainer.

Measure four cups of fruit pulp and put it in a heavy pot. Then add an equal amount of sugar and the lemon juice.

Simmer on low heat until the mixture thickens; this takes about one hour. Skim off any foam as it is cooking.

When at the desired consistency, pour into sterilized jars and let cool. Use a funnel and wipe any jam that drips on the edges or sides of the jars. Seal the jars and cool.
