Persimmon, Pomegranate, and Goat Cheese Salad

Ingredients
Pomegranate Seeds
Dressing:
1/4 cup olive oil
2 tablespoons Balsamic Vinegar
1 tablespoon lemon juice
1 Shallot, minced
1 clove of garlic, minced
Preparation

Wash the watercress or spinach and top with wedges of Persimmon, Pomegranate seeds, nuts, and crumbled goat cheese (the more goat cheese the better in my opinion)
.

This light salad is the perfect partner for Soups and heavier dishes. Put this on your menu in the late fall when Persimmons and Pomegranates are in season.
