Shrimp Louis

Ingredients

1/4 cup mayonnaise
2 tablespoons chili sauce
1 tablespoon Dijon mustard
1 tablespoon lemon juice
1 teaspoon fresh lemon zest
4 cups Baby spring greens
1 avocado, peeled, halved and pitted
10 large shrimp, shelled, deveined, and cooked

Preparation

Whisk mayonnaise, chili sauce, mustard, lemon juice and lemon zest in small bowl to blend.

Season dressing with salt and pepper.

Arrange lettuce leaves on on 2 plates. Top with 1 avocado half, rounded side down, and fill with shrimp.

Spoon dressing over; sprinkle with green onion.

Arrange quartered hard-cooked eggs around plate.
