Simple soup with lentils and sausage
Ingredients
½ onion, chopped
1 tbs olive oil
1 carrot, thinly sliced
Celery stalk, thinly sliced
1 ½ cups smoked sausage (about 200g), sliced
600-800ml water
Bay leaf
Celery
250g canned lentils, washed and drained
Preparation

Sauté the onion in hot oil until tender.

Add carrots and celery, stir and simmer briefly for 2 minutes.

Add sausage, water, bay leaf and celery. Stir.

Bring to a boil and reduce heat, simmer for 10 minutes.

Add the lentils, increase the heat and bring to a boil once again.

Reduce heat and cook the soup another 10 minutes.

Before serving, remove celery and bay leaf from the soup.
