Vegetable Cottage Cheese Salad
Ingredients
◦1 package (4-serving size) JELL-O Brand Lemon Flavor Sugar- Free Gelatin
◦1 cup Boiling water
◦¾ cup Cold water
◦1 tbsp Vinegar
◦1 cup (8 oz) 2% lowfat cottage cheese
◦¼ cup Chopped celery
◦¼ cup Chopped green pepper
◦¼ cup Chopped red pepper
◦¼ cup Chopped carrot
◦¼ tsp Onion powder
◦⅛ tsp Black pepper
Preparation

1.Completely dissolve gelatin in boiling water

2.Add cold drinking water and vinegar Measure 1 cup gelatin combination

3.divide evenly among 3 individual plastic containers (for brown bagging) or serving dishes

4.Chill until set but not firm

5.Add remaining ingredients to remaining gelatin Chill until slightly thickened

6.Spoon over clear gelatin Chill until firm approximately 2 hours

7.Makes 3¾ cups or 3 entree servings.
