Chocolate Covered Cheesecake Squares
Ingredients
8 ounces cream cheese, softened
⅛ teaspoon liquid stevia (adjust sweetener to taste)
2 tablespoons sour cream
1 egg, lightly beaten
½ teaspoon pure vanilla extract
8 ounces Sugar-free Chocolate Chunks* or bittersweet chocolate

Preheat oven to 325°.

Line a small baking dish (approximately 8 ½”x 6”) with foil and spray with nonstick cooking spray.

In mixing bowl, beat cream cheese until smooth. Add sour cream, stevia, egg, and vanilla. Mix just until well combined.

Pour into prepared baking dish. Bake for 20 minutes or until center of cheesecake is almost set. Cool on wire rack.

Refrigerate until chilled. Freeze overnight.

Line a baking sheet with waxed paper.

In microwave-safe bowl or on stovetop, melt chocolate. Cool slightly. Using edges of foil, lift cheesecake out of pan. Gently peel off foil; cut into 24 squares. Remove a few pieces at a time for dipping; keep remaining squares refrigerated until ready to dip.

Using a toothpick, completely dip squares, one at a time, in melted chocolate. Place on waxed-paper lined baking sheets. Spoon additional chocolate over each square to cover completely. Store in air-tight container in refrigerator or freezer.

*Sugar-free Chocolate Chunks

2 ounces unsweetened baking chocolate

1 teaspoon shortening or cocoa butter

⅛ teaspoon stevia (adjust sweetener to taste)

In microwave-safe bowl, heat all ingredients at 50% power for 1 minute. Stir. Continue heating and stirring in 20-30 second intervals until chocolate is smooth and completely melted.

TIP- if you are short on time, (or patience!) I found an easy way to finish these instead of individually dipping. Melt chocolate, then pour a thin layer on top of cheesecake before cutting into squares. Beautiful!
