Greek Inspired Baked Quinoa
Ingredients
2 cups quinoa and water needed for cooking
1/4 cup chicken broth
1 tbsp roasted garlic grapeseed oil
1/4 cup feta crumbles
1/4 cup shredded Parmesan cheese
2 handfuls cherry tomatoes, finely chopped
1/2 pkg frozen spinach, thawed (you could use the whole pkg, I did not because I like spinach but I don’t love it)

Cook quinoa according to pkg directions

Preheat oven to 350

In a 8×8 glass baking dish mix the following: quinoa, spinach, tomatoes, Grapeseed oil, and chicken broth

Top with cheeses

Bake uncovered for about 20 min
.

This baked quinoa has everything needed in a good side dish – not too many ingriedients, easy, simple assembly, tasty, and not too filling.
