Cherry Pecan Baked Oatmeal
Ingredients
3 cups rolled oats
1 cup brown sugar
¼ teaspoon nutmeg
2 teaspoons ground cinnamon
2 teaspoons baking powder
1 teaspoon salt
1 cup milk
2 eggs
½ cup melted butter
2 teaspoons vanilla extract
¾ cup dried cherries
½ cup toasted pecans, chopped

Preheat oven to 350°F. Spray a 9”x13” baking dish with non-stick cooking spray.

In a large bowl, mix together the rolled oats, brown sugar, nutmeg, cinnamon, baking powder, and salt until well combined. Make sure you get out all the lumps.

Beat in the milk, eggs, melted butter, and vanilla extract. Stir in the dried cherries and toasted pecans. Spread into the baking dish and bake for 40 minutes.
