Roasted Potato Curry Recipe

Ingredients

250 grams Potatoes-
1 Onion- big finely chopped
1 tablespoon Ginger- (finely chopped)
1 Green Chillies- finely chopped
Turmeric powder- a pinch
1 teaspoon Curry Powder-
Salt as required
2 tablespoons Oil-
For the seasoning
1/2 teaspoon Mustard-
1/2 teaspoon Urad dal-

Preparation

Wash potatoes well, peel the skin and cut it into small cubes and keep it in water until ready to use, to prevent discoloration.

Heat oil in a pan, add the ingredients for seasoning .When mustard splutters, add onion and saute well till it becomes transparent.

Then add ginger, green chillies and saute for a few more minutes.

Drain the water well and add the potatoes, turmeric powder, salt and chillie powder.

Cook covered on low fire stirring from time to time to prevent the potatoes from getting burnt.

You can sprinkle very less water if needed)
