Sausage and Goat Cheese Strata

Ingredients

1/2 pound turkey breakfast sausage links, casings removed
2 mediums onions, chopped
1 medium red bell pepper, chopped
3 red or green chili peppers (cayenne peppers) stemmed, de
3 cups egg substitute such as egg beaters (or 12 large eggs)
1/2 teaspoon cayenne pepper
Fresh ground pepper and salt to taste
7 slices whole wheat bread, crusts removed
1 tablespoon Dijon mustard

Preparation

Coat a 9x13 baking dish with non-stick.

Cook sausage in a large skillet over medium heat, crumbling as you cook. Remove from a skillet to a paper-towel covered plate and let drain. To the same skillet, add onions, pepper and cook until softened.

Meanwhile, in a large bowl, whisk together egg substitute, milk, cayenne, salt and pepper.

Lay the bread slices across the bottom of the baking dish, scatter sausage and onion mixture over the bread. Sprinkle the mustard across the mixture. Pour egg mixture over all and sprinkle with crumbled cheese. Cover and refrigerate 30 minutes to one hour.

Preheat oven to 350F. Bake strata uncovered until light brown and set in the center, about one hour. Cut into 12 equal pieces. Serve with fresh fruit.
