Fast Kid-Friendly Coleslaw

Ingredients

1/4 head of cabbage, chopped or shredded
1 1/2 cups carrots, chopped or shredded
1 apple, diced (or you could substitute pear)
cup vegan mayonaise
1/2 cup raisins
sea salt to taste

Preparation

Chop or shred cabbage and carrots, place in large mixing bowl.

In small bowl, add diced apple and lemon juice; toss well and add to cabbage and carrots.

Now add in mayonaise and apple cider vinegar, tossing it all together.

Throw in the raisins and mix again.

Refrigerate for at least an hour to help the flavors blend.
