Pesto Chicken & Pasta

Ingredients

1/2 cup walnut basil pesto base (see recipe on page)
1/4 cup warm water
3 tablespoons olive oil
1/2 teaspoon salt

Preparation

Fry chicken breasts in the bottom of a large wok with 1 tablespoon olive oil, turning occasionally until browned and cooked through.

Begin preparing pasta as directed.

Remove and shred chicken, discarding unwanted pieces.

Return shredded chicken to wok with remaining olive oil.

Add warm water to pesto base and mix with fork until smooth consistency is achieved.

Add pesto sauce to chicken, stir to combine, and turn setting on stove to low.

When pasta is done, drain and add to chicken mixture.

Sprinkle salt over mixture, combine thoroughly, and serve.
