Olive Pizza

Ingredients

A drizzle of olive oil
Some warm water
For the toppings:
Tomato sauce (there is a recipe on my blog for this)
Mozarella
A handful of black and green olives
Sprinkle of dried oregano
To Garnish:
Fresh basil to garnish

Preparation

Combine the flour, yeast and oil in a large bowl and then, a little at a time, add the warm water to form a silky dough. Knead for a few seconds and then place in a clean bowl, cover with a cloth and put somewhere warm to allow the dough to double in size.

When it is ready, roll out on a floured surface, add your toppings and place on a pizza tray in a very hot oven for about 10 minutes.

Garnish with the fresh basil

Pizza is one of those recipes that is so satisfying to make and serve up (particularly if you have friends who think that pizza only comes in a box). It is one of our favourites for a quick lunch and is great served with a rocket salad with a drizzle of oil.
