The Mulligatawny recipe below is from The Cooking with Trader Joe’s Cookbook: Dinner’s Done! The first time most of us heard of mulligatawny was on Seinfeld’s “Soup Nazi” episode, as Kramer’s favorite soup. Remember that one? People stood nervously in line, and if anyone broke the rules, the stern chef shouted, “No soup for you!”
No wonder people were willing to wait in line for this fantastic soup of vegetables, sweet apples, mild curry, and creamy yogurt. Traditional mulligatawny literally takes all day to make, but we whip up a lightning-fast version using prepared mirepoix, a ready-made curry sauce, and all-natural applesauce. The soup is mild enough that kids will love eating it as much as they’ll love saying the name. If you prefer your mulligatawny with more heat, simply add chili oil, hot sauce, or red pepper flakes to taste. As usual, the ingredients can all be found at Trader Joe’s and capitalized ingredients are specific Trader Joe’s products. If you’re not near a Trader Joe’s, you can substitute your favorite generic equivalent.
