Fire Witch Cocktail

Ingredients

3 ounces St. Germain
2 ounces water
1 ounce lemon juice
1 teaspoon beet powder
1 1/2 ounces gin
1 ounce Lillet Blanc

Preparation

Create Elderflower Beet Foam by adding 3 oz St. Germain, 2 oz water

Oz lemon juice, 3 egg whites and 1 teaspoon of beet powder into a pint glass and stir.

Pour these contents into isi canister and charge it with two nitrogen cartridges.

Next combine gin, Lillet, bitters and stir.

Dispense Elderflower Beet Foam into a glass.

Strain and pour the gin, Lillet and bitters mixture over the foam.
