Dark Cherry Walnut Rum Cake

Ingredients
2 cups all purpose flour
3/4 cup cocoa powder
1 package chocolate pudding (3.25 oz)
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
4 eggs
1/2 cup canola oil
2 teaspoons vanilla
1/2 cup chopped glazed cherries
For the glaze:
1 stick butter
1/4 cup water
1 cup sugar
3/4 cup brandy/rum
Preparation

Combine and sift flour,cocoa,sugar,baking powder,baking soda and salt

After sifting,proceed to combine the sifted ingredients and chocolate pudding

Combine walnut and cherries

Grease and flour a bundt cake pan.

Sprinkle chopped cherrywalnut over bottom of pan.

In a mixer,mix all cake ingredients together.

Pour batter into pan over next to cherrywalnut.

While cake has ten minutes to go,make the glaze.

Melt butter in saucepan.Stir in water and sugar.

Boil for 4 to 5 minutes,stirring constantly.

Stir to combine and reheat for 30 seconds.

Remove cake from oven.

Prick surface a hundred times with a fork(gently)

My mother's day cake is one crazy cake,a product of my trial and error in the kitchen.It makes me drowsy and sleepy.As you go on and read the recipe,you will know why.I cherish and I love this cake,it reflects me and my weird taste and at home no one enjoyed it.Life as a mother is tedious,wacky,compelling,peaceful,serene,emotional,verbal,sometimes mean yet empowering and this is what the cake is all about.I am proud of my dark,moist and out of this world cake!
