Irish Brown Bread

Ingredients
8 ounces /2 cups stone ground whole wheat flour (the coarser the better)
4 cups oz /1 unbleached white flour
1 teaspoon baking soda
1 teaspoon salt (I use about ½ tsp.)
1/2 to 3/4 liter/10-15 ounces buttermilk

Mix dry ingredients together in a medium-sized mixing bowl. Add enough buttermilk to make a wet-ish dough - this is important; make sure the dough is a bit wet. Pour into a greased 9"x5" loaf pan. Bake in preheated oven at 400 degrees F for 10 minutes, then at 375 degrees F for about 40 more minutes.

Don't overbake. Turn out onto a rack tocool. Spread with butter. Good the first day; just as good (or better) the next day.
