French Hot Chocolate

Ingredients

2 1/2 squares bitter chocolate
1 cup cold water
1/2 teaspoon salt
3/4 cup sugar

Preparation

Combine chocolate and water; cook until smooth and thick (about 20 minutes), stirring constantly. Add salt and sugar; cook 4 minutes. Cool.

Whip cream and fold into chocolate mixture. Store in refrigerator. When ready to use, heat milk to just below boiling. Add 1 tablespoon of chocolate mixture to each cup of hot milk. Blend and serve.
