In stainless steel cooking pot add egg white and sugar. Heat them together on low fire. If you have a disc to prevent barning use it . stir until sugar is dissolved.it should be translucent clear .( Don't boil or you will get omelet) remove to mixer bowl. Wisk it on very high speed for about 15 - 20 Minutes. The egg withe have to be stiff very hard. Add manually coconut and fold it in carefully.

About
It is very important to bake them on very low hit to get then crispy dry but still light in color.
This recipe is great a base for Muss cakes .
or pavalova.
