Canned Ocean Mackerel Curry

Ingredients

1 large Fijian can Ocean Canned Mackerel or any Canned Fish you would prefer
1 teaspoon of Curry Spices
Quarter of a teaspoon of Turmeric Powder
3 cloves of Garlic
1 teaspoon of Vegetable Oil

Preparation

PREPARATION: Peel potatoes and cube them into bite size pieces.

Mix the curry spices and turmeric together.

Make a garlic, ginger and chilli paste by crushing all the ingredients together :)

COOKING: In a shallow fry pan heat oil on medium heat.

Once oil is nice and hot add onions, chilli, garlic and ginger paste and sauté.

Sauté till its golden brown then add the potatoes.

Add the curry spices and turmeric to the potato and all the other ingredients.

Cook till the potatoes are nice and tender. Depending on the type of potatoes you use cooking time may vary.

Once potatoes are done add the canned mackerel and stir till every ingredient is happy with each other :)

You may have to break the fish into smaller pieces are they come in large chunks.

Now add the water and simmer slowly for 10 minutes approximately.

It’s all good, time to dig and enjoy the beautiful island curry fish treat.

You can serve it with rice or with naan bread or roti :)

One of the many dishes I grew up eating was canned ocean mackerel cooked with potatoes in curry sauce.

Mom had perfected this dish and it was a treat when she made this. I had this dish for lunch and dinner.

Mom knew the right days to cook this dish :).It was like she read my mind, here I was thinking about it and next thing I knew she was in the kitchen whipping this dish up.

Mom never had a fancy kitchen or a fancy stove to cook in.

A simple kerosene primus is all she had ,but the dishes she cooked on it were finger licking good :)

My version of Fijian Ocean Canned Mackerel Curry
