Chipotle Bacon Cheese Burgers

Ingredients
2 pounds lean ground beef
1 pound bacon
2 tablespoons coarse black pepper
2 tablespoons dry roasted garlic
2 tablespoons Worcestershire sauce
Your favorite burger cheese
Preparation

Cook the bacon until it is just done, still limp and juicy. Then cut it up into bite size pieces. I used kitchen shears for this first. It is easier than using a knife. Put everything in a large bowl and mix well. Don’t worry if the meat is on the dry side, the bacon will take care of that. Put it covered into the refrigerator for a few hours or overnight to let everything get happy. We make 5 patties out of 2 lbs of meat. Yes, they are VERY BIG…

Place them on the grill and because they are so big they are going to cook a little longer.

About 10 to 15 minutes before you’re done brush them with a little Raspberry Chipotle BBQ sauce. (The recipe for the sauce is on our web site @ http://datenightdoins.com)

Then add the cheese, dab a little sauce on it and pull them when the cheese is melted.

This week I wanted to put a different twist on the bacon burger.
I can never keep the bacon in place on one of these things so I thought I would put it in the burger.
And what can be better than bacon with chipotle and cheese … (We just used the beef to hold it together.)
The bacon flavor just jumped out at you followed with the smoky flavor of the chipotle; add beef and cheese and you’ve got a nice juicy burger. This one is a real winner.
Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to your taste. Take it and run with it….
