Sauteed Eggplant, Zucchini, and Onions

Ingredients
1 eggplant, any variety
1 zucchini
1 red onion
1 tablespoon butter
3 tablespoons olive oil
salt and pepper
grated cheese
Preparation

Peel and chop the vegetables. Sauté in butter and olive oil over low heat for 45 minutes to 1 hour, stirring occasionally. Add salt, pepper, and grated cheese to taste, and enjoy.

Serve as a side dish to grilled beef or any meal, or over cooked pasta.
