Classic Caramel Sauce

Ingredients

2 cups sugar
1 cup water
4 tablespoons butter (cubed into 4 piece)

Preparation

Combine sugar and water in a pot

Over medium high heat, bring the mixture to a lively simmer.

Boil off most of the water and look for developing brown spots.

Simmer until all the sugar have caramelized. Swirl the mixture around if the caramelization seems to be concentrated on one spot.

Take the pot off the heat immediately after all the sugar have caramelized.

Stir whipping cream into the caramel - taking care to avoid contacting the hot sauce mixture that may splatter up. Mix well.

Stir in the butter cubes.

About

Hints: Do not stir the sugar-water mixture during the caramelization process. Gently tap a brush loaded with water on the side of the pot if you need to get rid of sugar residue that clings to the side. Also, the caramelization process happens fairly quickly once it starts, so pay close attention to your sauce for the moment to take it off the heat.
