Tomato Basil Sorbet

Ingredients

1/4 cup sugar
1/4 cup water
1 tablespoon fresh basil, finely chopped (about 4 large leaves)
4 large ripe tomatoes, skins removed and seeded
2 tablespoons lemon juice
zest of one lemon
1/4 teaspoon salt
1 tablespoon tomato paste

Preparation

In a small saucepan, bring sugar, water, and basil leaves to a boil. Remove from the heat and allow to cool to room temperature.

Remove skin and seeds from tomatoes, and roughly chop. Place in a blender with the basil simple syrup and puree until smooth.

Add the lemon juice, salt, and tomato paste and blend until incorporated.

Process the mixture in an ice-cream maker according the manufacturer’s instructions.
