Awesome! No Bake ~ Macaroni and Cheese!

Ingredients
1/2 sweet onion – chopped
6 cloves garlic – crushed& chopped
1 bell pepper – chopped
10 ounces package frozen creamed spinach
Handful cilantro – chopped
1/2 cup ketchup
16 ounces container cottage cheese
1/2 cup milk
8 oz. cheddar cheese- shredded
1 pound of you favorite macaroni
Olive oil for drizzling

In a food processor combine the cottage cheese, milk and 4 oz. of the shredded cheddar cheese. Process until the cottage is smooth.

Prepare the macaroni as directed.

This is a great way to kick up macaroni and cheese. Serve as a side dish or just a simple main dish with a colorful side salad.
