Peppery Pear Relish
Ingredients
15 pears, peeled, cored, and
1 ground
12 mediums onions, ground
6 sweet red peppers, ground
6 green peppers, ground
6 hot peppers, ground
2 tablespoons celery seeds
2 cups white vinegar (5%% acidity)
2 cups prepared mustard
2 cups sugar
1 tablespoon salt

Pour hot mixture into hot sterilized jars, leaving 1/4 inch headspace.

Remove air bubbles; wipe jar rims. Cover at once with metal lids and screw on bands. Process relish in boiling-water bath 20 minutes.
