Pea and Coriander Soup

Ingredients
55 grams Butter
140 grams Onion, finely chopped
2 Cloves garlic, peeled and chopped
450 grams Fresh peas, frozen ones are also fine
900 ml Chicken stock
2 tablespoons Freshly chopped coriander
Salt and freshly ground black pepper
Softly whipped cream
Fresh coriander leaves
Preparation

Melt the butter over a gentle heat and sweat the onion, garlic and chilli for 3-4 minutes. Add the peas and cover with the stock. Bring to the boil and simmer for 7-8 minutes. Add the freshly chopped coriander and liquidize in a blender. Season with salt and pepper and add a pinch of sugar, which enhances the flavour. Serve with a swirl of whipped cream and a few fresh coriander leaves.

About
This soup is a smooth bright green soup. The dash of cream adds drama. Absolutely delicious. Not what one would expect of pea soup.
