Roasted Garlic and Herb Chicken

Preparation

Wash and pat chicken dry set aside.

In a mortar and pestle add herbs and pestle till a herb paste is made.

Mince garlic and salt to make into a paste.

Mix ghee or butter with garlic, add herbs, lemon juice and zest.

Rub garlic herb paste on chicken and under chicken skin.

Put quartered ½ med onion in chicken cavity with, ½ reserved lemon and herb sprigs.

Place chicken breast side up in a roasting pan put in oven for 45 minutes at 425 then turn down to 350 for 35 minutes.
