German Potato Pancakes

Ingredients
6 larges Potatoes, grated or shredded
2 eggs, well-beaten
1 1/2 tablespoons Flour
1/4 teaspoon Baking powder
1 1/2 teaspoons Salt
1 small onion, grated
to taste salt
to taste pepper
2 teaspoons paprika
1/2 cup cooking oil
Preparation

Mix above ingredients well in a large bowl.

Take a 1/4 cup of the potato mixture and make a pancake in between two sheets of wax paper. Set aside. Continue making cakes with the rest of the mixture.

Add cooking oil to a large saute pan. Once pan is hot add pancakes, two at a time.

Turn to brown on both sides.

About
This makes about 12 (3 inch) cakes. Good served with applesauce.
