New Zealand Roast Lamb

Ingredients

5 pounds Lamb shoulder (boned, rolled & tied)
1/4 cup Oil
2 teaspoons Salt
1/2 teaspoon Pepper

Preparation

Heat oven to 350. Rub meat with oil. Sprinkle with salt & pepper.

Roast 1 1/2 hours. During final 15 minutes, brush with sauce every 5 minutes, then once more just before serving. Serve remaining sauce with roast.
