Mrs. A's Banana Loaf
Ingredients
2 cups Whole Wheat Flour
3/4 cup All purpose Flour
cup Oats
1 teaspoon Cinnamon
1/2 teaspoon Baking Soda
2 teaspoons Baking Powder
1 cup Brown Sugar
2 eggs
3/4 cup Sour Cream
2 cups Banana Puree
1 teaspoon Vanilla
1/2 cup Nuts* (Optional)
Preparation

Preheat oven to 325F. Combine dry ingredients in a large bowl and mix with a whisk - This acts as a sifter. One at a time add the wet ingredients. Mix with a wooden spoon until smooth. Add nuts* and mix. Spray a loaf pan (5 x 9) with cooking spray and pour mixture into pan. Bake for 1 hour 30 minutes. I always start doing the toothpick test at 1hour 15 minutes to be sure not to over cook.

You can substitute nuts for chocolate chips, raisins, craisins or any other small treat.
