Bitter Melon Curry

Preparation

PREPARATION: Make sure the bitter melon is not fully mature or you will find that the seeds would be very hard and the dish won’t be enjoyable when you eat it.This is the key to this dish the size of the melons.

Fill a medium sized bowl filled with cold water then add 2 tablespoons of salt to it and put aside .

Wash and cut the bitter melon into thin circles.

Once you have done that put the bitter melon in the bowl and soak it for half an hour.

Why you may ask and some of you have already guessed it. The answer is simply to take some of the bitterness away.

While the melon is soaking prepare the rest of the ingredients by dicing the onion and chilli pepper and the garlic.

COOKING: In a medium fry pan add the oil and let it heat on medium high heat .

Take the bitter melon, pat dry with paper towel and add to the pan.

Slowly cook for about 10 minutes stirring it occasionally.

Make sure during this cooking process the water is evaporating from the melon and making it dry:)

Once the melon has changed colour from green to a nice golden colour add all the other ingredients and stir thoroughly.

Cook for another five minutes on a higher temperature till the bitter melon is nice and crispy.

Now take of heat and serve with rice, roti or with your favourite meat, yumm :)

Bitter Melon Curry
I remember my childhood days when we had so much land to plant our own fruit and vegetables back in the island.

What we look at organic food these days was grown back in the 70 ies and 80 ies.

Dad would prepare the land by cleaning the shrubs with the machete first then I would gather all the shrubs and rake them into a pile. I would take the pile and place it one end of the land waiting for it to dry out so that we could burn it.

Then we would each take a pitch fork and dig the soil and loosen the earth to ready it for planting. It was a very strenuous process however we knew that the fruits that the land would bear would be rewarding at the end.

One of the many things we grew in our home farm land was bitter melon. Bitter melon grows mainly on vines and takes a very short time for it to be ready for harvest.

That’s the best part:) the taste is acquired one.
Bitter melon as the name states is truly bitter and it takes special preparation to cook for you to really appreciate what this vegetable really offers.

A very good healthy vegetable. You can cook it in many different ways such as curry, in satay’s and deep fried with tamarind and curry filling which is a delicacy.You can also add egg to this dish ,very tasty mmmm
