Gluten-Free Scottish Shortbread
Ingredients
1 cup butter
1/2 cup icing sugar
1 tsp vanilla
1 cup rice flour
1/2 cup corn starch
1/2 cup tapioca flour
1/2 tsp guar gum
Preparation

Cream butter and icing sugar until very smooth.

Add other ingredients slowly while mixing.

Press with your hands into a 7x11" pan or 8x8" pan for a thicker shortbread

Bake for 30-40 minutes on 300 degrees (until edges brown)
