Spiced Pumpkin Pancakes
Ingredients
2 cups white whole wheat flour
1/4 cup brown sugar (I used turbinado)
2 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon ground ginger
pinch of ground nutmeg
1.5 cups milk (I used 1%)
1 cup pumpkin puree
1 egg
2 tablespoons vegetable oil
2 tablespoons vinegar
Preparation

Combine all the dry ingredients in a large bowl (flour, sugar, baking powder, baking soda, and the spices). Mix well.

Combine all the wet ingredients in a bowl and whisk together until the egg and the oil are well mixed.

Add the wet ingredients to the dry ingredients and whisk together until just combined.

Preheat a non-stick griddle, and coat it with non stick spray.Pour the batter into the griddle, using a very scant 1/4 cup of batter for each pancake. Cook the pancakes 2-3 minutes on each side, or until they are nicely browned and fully cooked inside.
