Vodka-Cured Salmon With Blood Orange Juice and Lime
Ingredients
16 thin slices raw salmon
2 shallots, finely chopped
1 leek, finely chopped into 3mm pieces
2 tablespoons vodka
juice of 1 ripe blood orange
1 teaspoon sea salt
freshly milled black pepper
few sprigs mizuno leaves or arugula
juice of 1 lime, to finish

Just before serving, sprinkle lightly with sea salt and freshly ground black pepper and the lime juice. Garnish with mizuno leaves or arugula and serve immediately.
