Broccoli Red Pepper Salad
Ingredients
1 100g Mixed salad lettuce packet
1 red pepper
1 head broccoli trimmed to florets
Dressing
3 tablespoons white wine vinegar
1 teaspoon Dijon mustard
2 tablespoons olive oil
1 clove garlice peeled and finely chopped
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon fresh parsley chopped
Preparation

Blanch the broccoli in a saucepan of boiling water, then rinse under a cold tap. Dry with a paper towel.

Remove the seeds from the pepper and cut into small chunks.

Place the lettuce in a salad bowl.

Add the broccoli and red pepper.

Mix the dressing ingredients together.

Pour over broccoli and red pepper, toss gently.

Serve immediately
