Green Bean & Brown Rice Provencale

Ingredients

1 teaspoon salt
1/8 teaspoon pepper
1 pound Green beans
1/2 teaspoon dried basil
3 oz. Can (½ cup) black olives, chopped
2 cloves garlic, minced
2 tablespoons grated Parmesan
1 pound Can tomatoes, drained
2 green onions, sliced

Preparation

Prepare rice according to package directions, adding bouillon to water, reducing salt to ½ tsp.

Meanwhile, snip beans and cut into thirds on the diagonal.

In large pot, cook tomatoes, onion and garlic until onions are tender.

Add salt, pepper, basil and green beans; continue cooking until beans are tender.

Stir in black olives, cheese, and green onions.

Serve rice in a ring with vegetable mixture in the center.
