Blue Cheese Apple And Potato Tart

Ingredients
2 tablespoons butter
1 cup onion (minced)
2 packages (4 oz.) Alouette Crumbled Blue Cheese
1 cup baby Arugula Salad

Preheat oven to 400º F.

Drain the potatoes and set aside.

Sprinkle tart with the Blue cheese and immediately place back in the oven.

Bake until bubble 10 – 12 minutes.

Remove from oven and top with baby Arugula and drizzle with olive oil and balsamic vinegar.
