Succulent Shrimp Pasta And Peas With Mushrooms And Fresh Herbs
Ingredients
2 C. fresh or frozen peas
1 Lb. pasta (white or wheat)
2 Tbsp olive oil
3 C chopped onion
2 C chopped red, yellow, orange bell peppers
4 C. mushrooms (crimini, shitaki, and portabello)
1/2 C white wine
1/3 C chicken stock
1 Lb large shrimp
1 Tbsp. fresh sage
1/2 tsp. dried thyme
salt and pepper to taste
1/2 C heavy cream
1/4 to 1/2 C fresh grated Parmesan cheese
Preparation

Blanche peas for approximately 5 to 10 minutes so they are still bright green and just tender.

Set aside.

Cook pasta according to box directions.

Saute onions, peppers, and mushrooms in olive oil.

Add wine to deglaze pan for about 5 to 7 minutes.

Pour in chicken stock.

Add shrimp. Cook approximately 5 minutes until pink.

Add herbs, peas, salt and pepper.

Add cream.

Then toss in pasta.

Sprinkle with fresh grated parmesan cheese.
